  • 1 cup brown sugar
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • 1/2 cup melted unsalted butter
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and line muffin tins with paper liners.
  2. In a bowl, combine cold butter, brown sugar, flour, and salt for the streusel topping; mix until crumbly.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In a large bowl, blend melted butter and granulated sugar. Add eggs one at a time followed by vanilla and pumpkin puree.
  5. Gradually mix dry ingredients into wet ingredients alternating with buttermilk until just combined.
  6. Fill muffin tins two-thirds full with batter and top with streusel mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for five minutes before transferring to a wire rack.
