  • 1 egg yolk
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F. Spread halved cherries on a parchment-lined baking sheet and sprinkle with sugar. Roast for about 10 minutes until softened.
  2. Lower the oven to 325°F. Prepare an 8×8 inch pan with non-stick spray and parchment paper.
  3. Sift together flour, cocoa powder, cornstarch, and salt in one bowl; set aside.
  4. In another bowl, whisk together sugar, eggs, melted butter, oil, and vanilla until light and fluffy.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Stir in half of the roasted cherries and chocolate chips.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 40-50 minutes until edges are set but center remains slightly underdone. Allow to cool before serving.
