  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Roast the garlic after cutting the top off, drizzling with olive oil, wrapping in foil, and baking for about 30 minutes.
  2. Grease a 9×13-inch baking dish.
  3. Thinly slice the potatoes using a mandoline slicer for uniformity.
  4. Layer potato slices upright in the greased dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until smooth but not boiling.
  6. Squeeze roasted garlic into a bowl and mash into a paste; stir into the cream mixture.
  7. Pour the creamy mixture over the layered potatoes and cover with foil. Bake for about 40 minutes.
  8. Remove foil; add remaining cheeses on top and bake uncovered for an additional 30 minutes until bubbly and golden brown.
  9. Let cool slightly before serving; garnish with fresh chives.
