  • 89 medium starchy potatoes (1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream (250 ml)
  • 1/4 cup whole milk (60 ml)
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese (40g), divided
  • 2 cups shredded Gruyère or mozzarella cheese (220g)
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Cut top off garlic, drizzle with olive oil and salt, wrap in foil, and roast until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice peeled potatoes using a mandoline slicer for even cooking.
  4. Layer potato slices upright in the greased baking dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until warmed through.
  6. Squeeze roasted garlic cloves into a bowl; mash into a paste and stir into the cream mixture.
  7. Pour creamy mixture over potato layers ensuring all slices are coated.
  8. Cover with foil and bake for 40 minutes.
  9. Uncover and add remaining cheeses on top; bake for an additional 30 minutes until golden brown.
  10. Cool slightly before garnishing with chives to serve.
