  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 cup basil (fresh, roughly chopped)
  • 1 28 oz. can San Marzano tomatoes (crushed)
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • 1 tbsp sugar

Instructions

  1. Preheat your oven to 375°F.
  2. Roast the sliced Roma tomatoes on a baking sheet drizzled with olive oil, salt, and pepper for about an hour.
  3. Sauté diced onions in butter or olive oil until translucent, then add minced garlic and thyme for one minute.
  4. Stir in crushed San Marzano tomatoes, fresh basil, and sugar; simmer for 10 minutes.
  5. Add the roasted tomatoes and chicken stock; simmer on low heat for 30 minutes.
  6. Blend the soup until smooth using an immersion blender or traditional blender.
  7. Stir in the heavy cream until fully incorporated.
