  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 pound pasta (spaghetti or preferred type)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and dry the cherry tomatoes, then place them in a large bowl.
  3. Cut the top off the garlic head to expose cloves; add it to the bowl.
  4. Drizzle with 2 tablespoons olive oil, season with salt, pepper, and optional red pepper flakes. Toss well.
  5. Spread tomatoes and garlic on parchment-lined baking sheet and roast for 25-30 minutes until blistered.
  6. Meanwhile, cook pasta according to package instructions in salted water until al dente.
  7. Reserve 1 cup of pasta water before draining.
  8. Squeeze roasted garlic into a bowl, then add roasted tomatoes and their juices; mash lightly.
  9. Combine the pasta with tomato-garlic mixture; use reserved water for desired consistency.
  10. Fold in basil and serve warm topped with Parmesan cheese.
