  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar for caramel
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon for crumble
  • 1/4 tsp nutmeg for crumble
  • 1/8 tsp allspice for crumble
  • 1/8 tsp ground cloves for crumble
  • 1/4 cup salted butter, melted for crumble
  • 1/4 cup light brown sugar, packed for crumble
  • 1 and 1/2 tbsp granulated sugar for crumble
  • 1/2 cup + 1 tbsp all-purpose flour for crumble
  • 3/4 tsp cinnamon for crumble
  • Pinch of salt for crumble

Instructions

  1. Make the Cookie Dough: In a bowl, cream softened butter and sugars until smooth. Add eggs and vanilla, mixing well. Gradually incorporate flour, baking soda, powder, salt, and spices. Chill for 30 minutes.
  2. Prepare the Apple Filling: Cook diced apples with butter, brown sugar, and spices until tender (15-18 minutes). Cool.

  4. Form Cookies: Scoop dough into balls and chill again before baking at 365°F (185°C) for 10-12 minutes.
