  • 1 pound Italian sausage (or turkey sausage)
  • 5 tablespoons unsalted butter
  • 21/4 cups mirepoix (diced carrots, celery, and onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot over medium-high heat, cook the Italian sausage until browned. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté mirepoix for 5–7 minutes. Add minced garlic.
  3. Stir in potatoes, seasonings, and chicken stock; bring to boil. Reduce heat and simmer until potatoes are tender (15–20 minutes).
  4. In another pot, melt remaining butter; whisk in flour until bubbly. Gradually add milk and heavy cream until thickened.
  5. Combine the creamy mixture with the potato mixture and stir in cheese until melted. Mix back in the sausage.
  6. Serve warm with bread if desired.
