  • 1 tablespoon granulated sugar
  • 2 and 1/2 teaspoons baking powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons chopped fresh chives
  • 1 cup shredded cheddar cheese
  • 1/2 cup unsalted butter, frozen
  • 2/3 cup cold buttermilk, plus 1 tablespoon for brushing
  • 1 large egg, separated
  • 3/4 cup finely chopped cooked chicken
  • Optional for topping: flaky sea salt

Instructions

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, garlic powder, salt, and pepper. Stir in chives and cheese.
  3. Grate frozen butter into dry ingredients and mix until crumbly.
  4. In another bowl, whisk buttermilk and egg yolk; combine with dry mixture along with chicken until just mixed.
  5. Turn dough onto floured surface, shape into a disc, and cut into wedges or scoop spoonfuls for drop scones.
  6. Brush with egg wash and sprinkle with flaky sea salt if desired.
  7. Chill for 15 minutes before baking for 22-25 minutes until golden brown.
