  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté onion until soft (about 5 minutes), then add garlic and mushrooms; cook until browned (about 8 minutes).
  3. Season with thyme, salt, black pepper; stir in cream cheese and Parmesan until creamy. Fold in Gruyère and one beaten egg.
  4. Unroll puff pastry on a clean surface. Cut diagonal strips along the sides while leaving the center intact for filling.
  5. Spread the mushroom mixture down the center of the pastry. Fold over ends and braid strips from each side over the filling.
  6. Transfer to baking tray; brush with remaining beaten egg. Bake for 20–22 minutes until golden brown.
