  • 20 oz refrigerated three cheese tortellini
  • 1 tbsp olive oil
  • 1/3 cup apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 6 oz chicken stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • 1/4 tsp crushed red pepper
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. Heat olive oil in a skillet over medium-high heat; sear shrimp for 1-2 minutes per side until pink. Remove from skillet.
  3. Lower heat and deglaze the skillet with apple vinegar; melt butter and sauté minced garlic until fragrant.
  4. Whisk in chicken stock and cream cheese until smooth; then add heavy cream and dried basil, simmering until thickened.
  5. Cook tortellini as per package instructions; drain.
  6. Stir fresh spinach into the sauce until wilted, then mix in red pepper flakes and Parmesan until melted.
  7. Combine cooked tortellini and shrimp with the sauce; serve warm.
