  • 8 tablespoons butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper in a bowl.
  2. In a stand mixer, cream butter until smooth; add brown sugar, molasses, and pumpkin puree. Beat until fluffy.
  3. Incorporate the egg and mix well.
  4. Gradually add dry ingredients; mix until just combined.
  5. Chill dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll chilled dough into balls, coat in sugar, and place on prepared sheets.
  8. Flatten slightly before baking for 12-14 minutes until set but soft.
  9. Cool on sheets before transferring to a rack.
