  • 4 tbsp unsalted butter, softened (for frosting)
  • ½ tsp vanilla extract (for frosting)
  • ¼ tsp salt (for frosting)
  • 2 ½ cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat softened butter and sugar until creamy. Add pumpkin puree, egg, and vanilla; mix until combined.
  3. In another bowl, whisk together flour, baking powder, cinnamon, salt, ginger, and nutmeg.
  4. Gradually add dry ingredients to wet mixture; mix until just combined. Refrigerate dough for 30 minutes.
