  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter as required

Instructions

  1. Gather and prepare all your ingredients. Slice the mozzarella thinly and chop the sun-dried tomatoes.
  2. Spread a generous tablespoon of pesto on one side of each slice of sourdough bread.
  3. Layer the mozzarella and sprinkle with sun-dried tomatoes on top of the pesto side. Close with another slice of bread, pesto side down.
  4. In a skillet over medium heat, melt a little butter and place the sandwiches in the skillet. Toast for 3-5 minutes on each side until golden brown and the cheese has melted.
