  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese

  1. Preheat oven to 375°F (190°C). In a skillet over medium heat, brown the ground beef; add diced onion and minced garlic until fragrant.
  2. Stir in corn, black beans, and diced tomatoes along with chili powder, cumin, paprika, and salt; simmer for 5–7 minutes.
  3. In a separate bowl, mix corn muffin mix with egg and milk until just combined.
  4. Pour the beef mixture into a greased baking dish; spread cornbread batter over the top.
  5. Bake for 25–30 minutes until cornbread is golden brown.
