  • 12 oz penne pasta
  • 1 lb chicken breast or shrimp
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 cloves garlic
  • Cajun seasoning
  • smoked paprika
  • red pepper flakes
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley or cilantro
  • lime juice

Instructions

  1. Cook the penne pasta in salted water until al dente. Reserve ½ cup of pasta water before draining.
  2. Season the chicken or shrimp with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet and cook until done; set aside.
  3. In the same skillet, sauté sliced bell peppers and minced garlic in olive oil and butter until softened.
  4. Stir in remaining Cajun seasoning, smoked paprika, and red pepper flakes; add heavy cream and simmer. Mix in Parmesan cheese until smooth.
  5. Combine cooked pasta and protein with the sauce, adding reserved pasta water as needed for desired thickness.
