  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear beef belly until browned on all sides (about 5-7 minutes). Remove from the pan and set aside.
  2. In the same pan, sauté minced garlic and sliced ginger until fragrant (1-2 minutes).
  3. Return the beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well.
  4. Bring to a boil then reduce heat to low. Simmer uncovered for 1 to 1½ hours, stirring occasionally until the beef is tender and the sauce thickens.
  5. Adjust seasoning if needed before serving hot over steamed rice garnished with chopped green onions and sesame seeds.
