  • 4 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ¾ cup milk (room temperature)
  • 1½ cups strawberry puree (from above)
  • 1 cup unsalted butter (room temperature) for frosting
  • 45 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract for frosting
  • 1 pinch salt for frosting
  • 1 cup strawberry puree (from above) for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Puree the fresh strawberries until smooth to yield about 2½ cups of puree.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add sour cream and vanilla.
  5. Gradually mix in dry ingredients alternately with milk until just combined.
  6. Fold in 1½ cups of strawberry puree gently into the batter.
  7. Divide batter between prepared pans and bake for 30 minutes or until a toothpick comes out clean.
  8. Cool in pans for 10 minutes before transferring to wire racks.
  9. For the frosting, beat butter until smooth, then gradually add powdered sugar and strawberry puree until creamy.
  10. Frost cooled cakes as desired.
