  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional, for extra heat)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, mix cubed chicken with olive oil and spices (chili powder, cumin, garlic powder, onion powder). Season with salt and pepper.
  2. Heat a large skillet over medium-high heat and cook the seasoned chicken for 5-7 minutes per side until golden brown.
  3. Cook corn by grilling or boiling; let cool before cutting off the kernels.
  4. In a large bowl, combine corn kernels with mayonnaise, sour cream, cilantro, lime juice, and optional chili powder.
  5. Rinse rice under cold water; in a saucepan combine rice with water and salt. Bring to a boil then simmer until fluffy.
  6. Assemble bowls by layering rice at the bottom followed by chicken and street corn mixture topped with black beans and diced avocado.
