  • 1 cup lemon juice (freshly squeezed)

  • 0.25 cup all-purpose flour
  • 0.25 tsp salt
  • 3 large eggs
  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter and both sugars until it becomes light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the flour and baking powder, mixing until just combined. Press half of this cookie dough into the bottom of your prepared pan.
  3. In another bowl, whisk together fresh lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour it over the cookie crust you just created.
  4. In a separate bowl, combine additional flour with granulated sugar and cold butter pieces until crumbly. Sprinkle this crumble over the lemonade filling generously.
  5. Bake your masterpiece in the preheated oven for about 40-45 minutes or until it's golden brown and set in the middle. Let it cool completely before cutting into squares.
