  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce)
  • 2 tablespoons sweet chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • Lettuce leaves

Instructions

  1. Heat sesame oil in a pan over medium-high heat. Add diced onions and sauté until translucent.
  2. Stir in minced garlic and ginger; cook for an additional 2 minutes.
  3. Add ground chicken to the pan, breaking it apart with a spoon. Cook until golden brown, seasoning lightly with salt and pepper.
  4. In a separate bowl, mix Tamari, sweet chili sauce, lime juice, and maple syrup to create your sauce.
  5. Pour the sauce over the cooked chicken along with chopped cashews; stir gently for about 2 minutes.
  6. Remove from heat and mix in shredded carrots, scallions, and cilantro.
  7. Spoon the filling into lettuce leaves and top with sesame seeds before serving.
