  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (halved and thinly sliced; about 1 cup)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (peeled and diced)
  • 1 lemon (zested and juiced; about 3 tablespoons juice and 1 teaspoon zest)
  • ½ cup roughly chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Peel and dice the pear into small pieces, tossing them with lemon juice to prevent browning. Set aside.
  2. In a large skillet over medium heat, cook the diced turkey strips until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess fat.
  3. In the same skillet, sauté the sliced shallots for about one minute until softened. Stir in the Dijon mustard.
  4. Add the frozen peas and prepared pear to the skillet, stirring for about five minutes until warmed through.
  5. Turn off the heat, gently fold in half of the crispy turkey strips, chopped parsley, and freshly ground black pepper.
  6. Transfer to a serving bowl, topping with remaining turkey strips and garnishing with lemon zest.
