  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 1/3 cup + 1 tablespoon milk
  • 1 (9-inch) store-bought pumpkin pie (premade/storebought)
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 34 tablespoons heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 325°F (160°C). Prepare the cheesecake layer by mixing softened cream cheese with sugar, flour, vanilla, cinnamon, heavy whipping cream, and eggs until smooth. Pour into a greased springform pan and bake for 45-50 minutes until set. Let cool completely.
  2. For the spice cake, whisk together flour, baking powder, and spices in one bowl. In another bowl, mix butter with brown sugar until fluffy; then add eggs and milk gradually before folding in dry ingredients. Bake at 350°F (175°C) for 25-30 minutes until a toothpick comes out clean. Let cool.
