  • 15 oz can red kidney beans (drained and rinsed)
  • 15 oz can pinto beans (rinsed and drained)
  • 1 medium yellow onion, chopped
  • 3 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 ½ teaspoons garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional for a hotter chili)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Shredded cheddar cheese (for topping)
  • Green onions, cilantro (for topping)

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sauté chopped onion for about 2 minutes until softened.
  2. Add ground beef and cook until browned, breaking it apart with a spatula (about 5 minutes). Drain excess fat.
  3. Stir in minced garlic and cook for another 30 seconds. Mix in chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste.
  4. Pour in beef broth while scraping the bottom of the pot for flavor. Add crushed tomatoes along with kidney and pinto beans.
  5. Bring the mixture to a boil, then reduce heat and let simmer uncovered for 1-2 hours, stirring occasionally.
