Ingredients

  • Fresh corn on the cob (or frozen/canned corn)
  • Vegan butter
  • Onion
  • Garlic
  • Dried thyme
  • All-purpose flour
  • Vegetable stock
  • Canned light coconut milk
  • Canned coconut cream
  • Potatoes
  • Green onions

Instructions

  1. Slice corn off the cob and set aside.
  2. Melt vegan butter in a large pot over medium heat. Sauté chopped onion until soft (3-5 minutes).
  3. Stir in garlic and thyme; sauté for another minute.
  4. Sprinkle flour into the pot, then slowly add vegetable stock, light coconut milk, and coconut cream while whisking until smooth.
  5. Add cubed potatoes and corn cobs; toss in a bay leaf.
  6. Bring to a simmer, cover, and cook for 25 minutes until potatoes are tender.
  7. Remove corn cobs and bay leaf; stir in fresh corn and simmer for another 5 minutes.
  8. Season with salt and pepper; serve hot.
