  • 2 tablespoons oil (or water for oil-free)
  • 9 oz vegan beef or portobello mushrooms
  • 1 large onion, diced
  • 3 large carrots, cut into chunky pieces
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 4 cups vegetable stock
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • Soy sauce
  • Salt
  • Pepper
  • Herbs

Instructions

  1. In a large pot over high heat, add oil and sauté the vegan beef or mushrooms until golden. Set aside.
  2. Lower heat to medium; sweat onions, carrots, and celery until soft. Stir in garlic.
  3. Sprinkle flour over the vegetables; stir to coat well.
  4. Gradually add vegetable stock while stirring to create a gravy base.
  5. Add potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs; mix thoroughly.
  6. Bring to a boil then reduce heat and simmer uncovered for about 45 minutes until potatoes are tender.
  7. Return the seared protein to the pot about ten minutes before serving.
