  • 1/2 cup + 2 Tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 Tablespoon ground flaxseed + 3 Tablespoons water)
  • 1 1/2 cups + 3 Tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water and letting it sit for about five minutes until gel-like.
  2. Cream together room-temperature vegan butter, light brown sugar, and regular sugar until fluffy.
  3. Mix in the flax egg, maple syrup, water, and vanilla bean paste until well combined.
  4. In another bowl, whisk together flour, cornstarch, cinnamon, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients without overmixing.
  6. Gently fold in chopped pecans.
  7. Chill dough for about 30 minutes.
  8. Preheat oven to 350°F (175°C). Scoop tablespoon-sized portions of dough, roll them in sugar, and place on a lined baking sheet.
  9. Bake for about 15-18 minutes until golden around the edges but soft in the center. Cool before serving.
