  • 3 tablespoons vegan butter
  • 1/2 cup chopped pecans
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 cup room temperature vegan butter
  • 1/2 cup + 2 tablespoons granulated sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1.5 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water in a small bowl. Let it sit for about 5 minutes until thickened.
  2. In a large bowl, cream together room-temperature vegan butter and both sugars until light and fluffy. Add the flax egg and vanilla, mixing well.
  3. In another bowl, whisk together the flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined. Fold in chopped pecans gently.
  4. Scoop about a tablespoon of dough, roll into balls, and coat in extra sugar before placing on a lined baking sheet. Slightly flatten each ball.
  5. Preheat oven to 350°F (175°C) and bake for 12-15 minutes until golden around the edges but still soft in the center. Cool on a wire rack.
