  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 large egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup white chocolate chips
  • 1 cup chopped Reese’s peanut butter cups

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time and mix well. Stir in vanilla.
  3. In another bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture until combined. Chill dough for an hour.
  4. For the cheesecake filling, beat cream cheese until smooth; add sugar, egg, and vanilla until creamy.
  5. Scoop cookie dough into discs, place cheesecake filling in the center, fold edges over, and form into balls on the baking sheet.
  6. Bake for about 10-12 minutes until edges are golden. Cool slightly before transferring to a wire rack.
  7. Melt white chocolate chips and drizzle over cookies; top with chopped Reese’s cups.
